Easy preparation within 20 minutes
Ingredients for 4:
400g spaghetti
1 medium onion
2 stalks celery
2 small zucchini
1 eggplant
300g of fresh tomatoes (peeled or preserve)
60g butter (or margarine)
Parmesan cheese
Salt
Pepper
Preparation:
Chop the onion and cut up the remaining vegetables, put everything in a pot and cook them in the butter until they are a bit 'small (but not mashed). Add salt and pepper and cook for another 10 minutes. Add the Parmesan and stir. Meanwhile have prepared the pasta, boiled and drained separately, and on it will pour the sauce of vegetables just obtained. Stir and sprinkle with a little bit more Parmesan.
